Bell Pepper Boats!

I always see such mouth-watering easy healthy recipes online but never get the chance to try it. But I finally got to try making Bell Pepper Boats for lunch! And I MADE IT ALL ON MY OWN (*^▽^*) Mission accomplished.

I just threw in whatever there was available in the kitchen. And thankfully it turned out yummy!


INGREDIENTS

Bell Peppers, cut into halves with seeds removed (I used sweet mini peppers, first time trying them and they’re super yummy and cute!)

Brown rice

Tomato dip

Boiled eggs

Pickled Vegetables (cucumber, carrots)


Mix everything up except for the bell peppers (duh.) . Once done, scoop it up carefully to place into the bell peppers. And there you have it! Delicious bell pepper boats 。^‿^。
