It’s the second week of June! I’ve been going out a lot the past week and also spending
a lot quite a bit of money (＞ｙ＜) . Time to stop! I’m trying to eat at home more and being more mindful of what I purchase. Anyway, this is a recipe that I have been wanting to share with you for ages (since last December, mind you) – Chocolate Chip Banana Muffins !!! ｡^‿^｡
CHOCOLATE CHIP BANANA MUFFINS
Recipe adapted from Taste of Home
makes 16 muffins
1 & 3/4 cups all-purpose flour (sometimes i use wholewheat flour, but i don’t ever use it for the full amount they ask for, so part wholewheat, part all-purpose)
3/4 cup sugar (you can also try using part unrefined sugar here)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup canola oil
1/2 cup plain yogurt
1 tsp vanilla extract
1 cup mashed ripe bananas (this is around 2-3 medium bananas)
3/4 cup semisweet chocolate chips
1. Combine flour, sugar, baking powder, baking soda and salt in a large bowl.
2. In another bowl, whisk the egg, oil, yogurt and vanilla extract. Stir into the the dry ingredients just until moistened. Then, fold in the bananas and chocolate chips.
3. Fill greased or paper-lined muffins cups 2/3 full of batter. Bake at 350° for 22-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.
